ADAM CRANE | GENERAL MANAGER & WINE DIRECTOR

Adam Crane has been working in the restaurant business since his teenage years. He earned two bachelor’s degrees in Hospitality Management from the University of Central Florida’s Rosen School of Hospitality Management. Before joining the 1921 team, Crane held leadership positions at Winter Park’s award-winning Ravenous Pig, Prato, and Luma on Park. The Orlando native is a Certified Sommelier through the Court of Master Sommeliers.

Brenton Hillman | EXECUTIVE CHEF

A native of Wyoming, Brenton Hillman has been serving Lake County, Florida diners his creative fare for over two decades. A graduate of Le Cordon Bleu Orlando, Hillman’s focus and dedication lies in highlighting the bounty of Florida and the region - working with the highest quality ingredients from fresh seafood, to produce and proteins from local and regional farmers, to artisan purveyors. He comes to 1921 Mount Dora having successfully honed his skills through years of passion for the culinary arts, in kitchens at Mount Dora’s Park Bench, Windsor Rose Tearoom, and most recently the Goblin Market.
